Handling protocols

  • Remove tough stems, damaged leaves and visibly spoiled material before preparation.
  • Keep fresh leaves unwashed during storage where practical and wash under clean running water when ready to cook.
  • If reducing bitterness, squeeze and rinse with clean potable water until the desired flavour is reached.

Storage tips

  • Refrigerate fresh unwashed leaves in a breathable food-safe bag and use within about 3–5 days for best quality.
  • Once washed and squeezed, refrigerate immediately in a clean covered container and ideally use within about 1–2 days.
  • Discard leaves that become slimy, moldy, sour-smelling or extensively discoloured.
