Handling protocols

  • Inspect before cooking. For loose or repacked rice, remove stones, husks, insects or damaged grains; reject packaged rice if the bag is wet, torn, mouldy or insect-infested.
  • Use a clean, dry scoop and keep uncooked rice away from moisture. Rinse or prepare according to the recipe or manufacturer instructions.
  • After cooking, refrigerate leftovers within 2 hours, or within 1 hour when the temperature is above 32°C, using shallow covered containers.
  • Use refrigerated cooked rice within 3–4 days and reheat leftovers thoroughly to 74°C (165°F).

Storage tips

  • Store uncooked rice in a cool, dry place in its sealed pack or an airtight food-grade container, away from heat, moisture and pests.
  • For opened or Meal05-repacked rice in warm or humid household conditions, Meal05 quality target: best used within about 6 months; manufacturer-sealed packs should follow the printed best-before date.
  • Discard rice if it becomes mouldy, persistently damp, heavily insect-infested or develops a musty or otherwise unusual odour.
