Handling protocols

  • The fish should smell fresh and mild, with firm flesh; reject fish with sour, rancid or ammonia-like odours.
  • Keep it cold from delivery to preparation and keep raw fish separate from cooked or ready-to-eat foods.
  • If rinsing is needed, use clean potable water and clean the sink and nearby surfaces afterwards.
  • Cook finfish to an internal temperature of 63°C (145°F).

Storage tips

  • Refrigerate at 4°C or below and aim to use within 1–2 days of delivery.
  • If it will not be used promptly, wrap well and freeze at about −18°C; for best quality, aim to use within about 2–3 months.
  • In very hot conditions above 32°C, do not leave raw fish unrefrigerated for more than 1 hour.
