Handling protocols

  • Keep the fish frozen until needed and reject packs with major thawing, leakage, excessive ice crystals or damaged packaging.
  • Thaw in the refrigerator, or sealed in cold water for quicker thawing; do not thaw on the kitchen counter.
  • Prevent raw fish juices from contacting cooked or ready-to-eat foods, and wash hands, knives, boards and surfaces after handling.
  • Cook fish to an internal temperature of about 63°C (145°F), or until the flesh is opaque and separates easily with a fork.

Storage tips

  • Keep frozen at about -18°C or below. Meal05 quality target: best used within roughly 4–8 months while continuously frozen.
  • After refrigerator thawing, keep at 4°C or below and cook within about 1–2 days.
  • Discard if the fish develops strong sour, rancid or ammonia-like odours after thawing.
