Handling protocols

Inspect the ears and remove any with visible mould, severe insect damage or soft spoiled areas.
Keep the husk on until preparation where practical; then remove the husk and silk and wash with clean water.
Boil, roast or grill the maize according to the intended dish.

Storage tips

Refrigerate fresh maize in the husk and aim to use within 1–2 days for best quality.
Where reliable refrigeration is unavailable, use the maize as soon as possible, preferably the same day.
Do not use ears that develop mould, slime or a strong sour or rotten odour.
