Handling protocols

  • Keep frozen fish cold continuously and reject packs that are torn, soft, heavily frosted or show signs of thawing and refreezing.
  • Thaw in the refrigerator overnight, or in a sealed bag under cold water if cooking immediately; never thaw on the kitchen counter.
  • Keep raw fish separate from ready-to-eat foods and clean hands, knives, boards and work surfaces after handling.
  • Cook to 63°C (145°F). Sardine-type fish can develop heat-stable histamine after serious temperature abuse, so cooking does not make mishandled fish safe.

Storage tips

  • Keep frozen at about −18°C until needed.
  • For best eating quality, aim to use frozen Sawa within about 2–3 months.
