Handling protocols

  • Keep whole shallots dry and protect the bulbs from cuts, bruising and crushing.
  • Do not wash before storage; remove loose dry skin if needed, then peel and wash only immediately before preparation.
  • Inspect stored bulbs regularly and remove any that become soft, moldy or begin rotting.

Storage tips

  • Store whole shallots in a cool, shaded, dry and well-ventilated location in a mesh bag, basket or other breathable container.
  • For best household quality, use within about 2–4 weeks.
  • Once peeled or cut, refrigerate promptly in a clean covered container.
  • Discard bulbs that become extensively soft, wet-rotten, moldy, leaking or rotten-smelling.
