Handling protocols

  • Handle gently to avoid bruising, skin abrasion and compression damage.
  • Allow firm fruit to ripen in a shaded, ventilated place rather than in direct sun.
  • Wash under clean running water before peeling or cutting, and remove badly damaged areas.

Storage tips

  • Keep unripe mangoes in the coolest shaded and ventilated part of the room until they yield slightly to gentle pressure.
  • Avoid prolonged refrigeration of hard unripe mangoes.
  • Once ripe, refrigerate and use within about 3 days for best quality.
  • Discard fruit with mold, leaking flesh, extensive water-soaked decay or a fermented smell.
