About this item

Big smoked farmed catfish is catfish processed with smoke to develop flavour and reduce moisture, then sold in Meal05's larger size tier. Smoking does not by itself prove that the fish is fully dried or shelf-stable.

Handling protocols

  • Inspect for mould, damp patches, insect activity or sour/rancid odours and discard affected fish.
  • Keep the fish dry and protected from contamination after opening; remove bones carefully during preparation.
  • Because the degree of drying can vary, heat the smoked fish thoroughly in cooked dishes rather than assuming it is ready to eat directly from storage.

Storage tips

  • Until the product is confirmed as fully smoke-dried and shelf-stable, refrigeration is the safer default after delivery.
  • If the fish is moist or pliable, refrigerate at 4°C or below and aim to use within 3–4 days; freeze if keeping it longer.
  • If it is fully dry throughout, keep airtight in a cool, dry place away from humidity and insects and aim to use within about 2–4 weeks; refrigeration or freezing is preferable during humid weather.
