Handling protocols

  • Inspect for mould, damp patches, insect activity or sour/rancid odours and discard affected fish.
  • Keep the fish dry and protected from contamination after opening; remove bones carefully during preparation.
  • Because the degree of drying can vary, heat the smoked fish thoroughly in cooked dishes rather than assuming it is ready to eat directly from storage.

Storage tips

  • Until the product is confirmed as fully smoke-dried and shelf-stable, refrigeration is the safer default after delivery.
  • If the fish is moist or pliable, refrigerate at 4°C or below and aim to use within 3–4 days; freeze if keeping it longer.
  • If it is fully dry throughout, keep airtight in a cool, dry place away from humidity and insects and aim to use within about 2–4 weeks; refrigeration or freezing is preferable during humid weather.
